Thanks to the gracious hospitality of oyster farmer Judity Vajik, we saw how oysters are farmed and processed, ate raw oysters right from the seabed with a squeeze of lemon and hot sauce (yum!) and got a great recipe from Judith for fresh west coast oysters. I give the experience 5 out of 5 wellies! Thanks to Rab Woods for the photographs.
